I was wondering if anyone knew a recipe that Prawn crackers are used in as an ingredient, as i have a load of them and i don't know what to do with them.
Answer:
I have used them and a few my UK chef mates to for a breading on fish, king prawns, even crushed and sprinkled over cooked fish or seafood items like croutons or use them mixed with breadcrumbs, spices and melted butter to gratin fish pie or fillets of fish baked in a gratin dish.
The Japanese use small rice crackers in some tempura batters, for pop, just add them before yu go to dip and fry as they will breakdown quickly once wet.
