Do Japanese people wash their rice before cooking?

Question:


I've heard that washing the rice removes some of the nutrients from the shell of the rice, but I've also heard that washing the rice is necessary. Which is it? What is the customary way of cooking rice (for simply eating such as in gyuudon, etc) in a rice cooker?

Answer:


Most Japanese people will tend to wash the rice first when preparing it before cooking. The correct method is as follows:

1. Pour water into the bowl until it just covers the rice. Holding the bowl carefully with one hand, stir the rice briskly for 10-15 seconds with the other hand.

2. Carefully tip the milky water out, covering rice with one hand.

3. Repeat for a second and third time until the water runs clear.

4. Drain rice in a fine mesh sieve and leave for 30 minutes if you have time.
