Do wasabi paste or tamarind paste go bad?

Question:

i make sushi sometimes, but not often enough to use all of the wasabi paste i mix up. so i have two tiny jars of wasabi paste (wasabi powder mixed with water) in the refrigerator, and i'd like to know if they can still be eaten or if there would be something wrong with them by now. one has been in there for i don't even know how long, the other has been in there for 2 or 3 weeks. essentially it's just mustard, right? mustard lasts for a long time...

also, i bought a pack of tamarind paste a long time ago (no longer than one year) that has no expiration date on it. i haven't opened it and it's been refrigerated. would that expire?

Answer:

Wasabi paste mixed with water is usually hotter than wasabi from a tube, but being exposed to air makes the mixed wasabi loose its strong flavour, even after just a few minutes. Therefore, it is unlikely that your wasabi will go bad, but it certainly won't have the same kick it usually has when freshly prepared.

In Japanese restaurants, wasabi is usually prepared in very small amounts only when it is needed. This helps to keep the flavour.
